Ingredients

Scale
  • 2 cups cake flour
  • 1 teaspoon salt
  • 2 1/2 teaspoons baking powder
  • 4 egg whites
  • 2 sticks butter (room temperature)
  • 1 1/4 cups sugar
  • 2 teaspoons vanilla extract
  • 1 cup milk (room temperature)
  • 1/2 cup sour cream (room temperature)

Instructions

  1. Preheat the oven to 350°F (177°C). Prepare three 6-inch cake pans by buttering, flouring them, and lining the bottoms with parchment paper.
  2. In a medium bowl, whisk together cake flour, salt, baking powder, and baking soda; set aside.
  3. In a small bowl, mix together milk, sour cream, and vanilla; set aside.
  4. Using a stand mixer or handheld mixer, cream together butter and sugar on medium speed for about 3 minutes until smooth.
  5. Gradually add egg whites while mixing on low speed until fully incorporated. Increase speed to high for another 1-2 minutes.
  6. On low speed, alternately add dry ingredients and the milk mixture until just combined. Avoid overmixing.
  7. Pour batter evenly into prepared pans and bake for approximately 30-35 minutes or until a toothpick inserted comes out clean.
  8. Let cakes cool in the pans for about 15-20 minutes before transferring them to a wire rack to cool completely.
