  • 2 lbs beef chuck, cut into 1-inch cubes
  • 2 tablespoons olive oil
  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 1 can (14 oz) diced tomatoes
  • 1 cup beef broth
  • 1 tablespoon tomato paste
  • 1 teaspoon dried rosemary
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano

Instructions

  1. Preheat your oven to 325°F (163°C).
  2. In a Dutch oven, heat olive oil over medium heat. Sauté the chopped onion for about 5 minutes until translucent. Add garlic, carrots, and celery; cook for an additional 5 minutes.
  3. Increase heat to medium-high and brown the beef cubes on all sides for about 8–10 minutes. Season with salt and pepper.
  4. Stir in diced tomatoes, beef broth, tomato paste, and herbs until well combined.
  5. Cover the Dutch oven with a lid and place it in the preheated oven. Bake for approximately 2 hours or until the beef is tender.
