  • 2 large eggs
  • 1 cup light brown sugar (packed)
  • ¼ cup unsalted butter (melted)
  • ¼ cup corn syrup (light or dark)
  • 1 tsp vanilla extract
  • 1 ½ cups pecan halves (or chopped pecans)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a 9×13-inch baking dish with parchment paper.
  2. For the crust, mix together 1 ½ cups flour, ½ cup softened butter, ¼ cup granulated sugar, and ¼ tsp salt until crumbly. Press into the bottom of the prepared dish.
  3. Bake for 10 minutes until lightly golden, then set aside to cool.
  4. For the filling, whisk together 2 beaten eggs, 1 cup packed brown sugar, ¼ cup melted butter, ¼ cup corn syrup, and 1 tsp vanilla extract. Gently fold in 1 ½ cups pecans.
