  • 1 pound skirt steak (or flap/flank steak)
  • 2 tablespoons avocado oil
  • 1 ripe avocado
  • 1 pound tomatillos
  • ½ yellow onion
  • 2 cloves garlic
  • 1 jalapeño
  • Juice of 1 orange
  • Juice of 1 lime
  • Fresh cilantro
  • Spices: paprika, oregano, cumin, onion powder, black pepper, kosher salt

Instructions

  1. Prepare the avocado salsa by heating avocado oil in a skillet and cooking tomatillos, onion halves, garlic cloves, jalapeño, and water until soft. Stir in cilantro, lime juice, oregano, and salt.
  2. Marinate the skirt steak in a mixture of orange juice, lime juice, half the cilantro, and spices for at least 15 minutes.
  3. Preheat your grill or skillet over medium-high heat and grill the steak for about 4-5 minutes per side until cooked to your liking. Let rest before slicing.
  4. Warm corn tortillas on the grill; then assemble by layering sliced steak and topping with avocado salsa.
