  • 1 large chicken breast
  • 2 medium sweet potatoes
  • 1 ripe avocado
  • Juice of 1/2 lime
  • 1 cup cherry tomatoes
  • 1 tbsp olive oil
  • 1/2 tsp paprika
  • 1/2 tsp garlic powder
  • Salt & pepper to taste
  • 1 tbsp olive oil (for sweet potatoes)
  • 1/2 tsp smoked paprika
  • 1/2 avocado, diced
  • 1/4 small red onion, thinly sliced
  • 1 tbsp olive oil (for salad)
  • Optional: chopped fresh cilantro

Instructions

  1. Preheat your oven to 200C (400F).
  2. Toss sweet potato wedges in olive oil, smoked paprika, and salt. Bake on a sheet for 20–25 minutes until crispy.
  3. Season chicken breast with olive oil and spices; grill over medium heat for 6–7 minutes per side until cooked through.
  4. Mash avocado with lime juice; season for guacamole.
  5. Mix cherry tomatoes, diced avocado, red onion, olive oil, salt, and pepper for the salad.
  6. Assemble by layering sweet potato fries, sliced chicken, guacamole, and salad in bowls.
