- 1 large chicken breast
- 2 medium sweet potatoes
- 1 ripe avocado
- Juice of 1/2 lime
- 1 cup cherry tomatoes
- 1 tbsp olive oil
- 1/2 tsp paprika
- 1/2 tsp garlic powder
- Salt & pepper to taste
- 1 tbsp olive oil (for sweet potatoes)
- 1/2 tsp smoked paprika
- 1/2 avocado, diced
- 1/4 small red onion, thinly sliced
- 1 tbsp olive oil (for salad)
- Optional: chopped fresh cilantro
- Preheat your oven to 200C (400F).
- Toss sweet potato wedges in olive oil, smoked paprika, and salt. Bake on a sheet for 20–25 minutes until crispy.
- Season chicken breast with olive oil and spices; grill over medium heat for 6–7 minutes per side until cooked through.
- Mash avocado with lime juice; season for guacamole.
- Mix cherry tomatoes, diced avocado, red onion, olive oil, salt, and pepper for the salad.
- Assemble by layering sweet potato fries, sliced chicken, guacamole, and salad in bowls.
