  • 1 cup carrots
  • 1 cup romaine or green leaf lettuce
  • 1/2 cup cucumber
  • 1 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp dried oregano
  • Salt & black pepper to taste
  • 12 tbsp ranch dressing or yogurt-based dressing

Instructions

  1. Preheat grill to medium-high heat. Season chicken with salt, pepper, and olive oil, then grill for 6–8 minutes per side until cooked through. Let rest before slicing.
  2. In a skillet, heat olive oil over medium heat. Sauté sliced carrots with garlic powder, oregano, salt, and pepper for 5–7 minutes until tender-crisp.
  3. Wash and chop romaine lettuce; slice cucumber.
  4. In a large mixing bowl, layer romaine, grilled chicken slices, sautéed carrots, and cucumber rounds.
  5. Drizzle ranch or yogurt dressing over the top and garnish with lemon juice or fresh herbs.
