  • 10 ounces portabella mushrooms, halved and thinly sliced
  • 1/4 cup all-purpose flour
  • 1 cup chicken stock
  • 1 cup whole milk
  • 2 cups cooked chicken breasts, chopped
  • 1 cup shredded cheddar cheese
  • 3/4 cup panko bread crumbs
  • 1/2 cup finely shredded Parmesan cheese

Instructions

  1. Prepare the wild rice by boiling four cups of water, adding the rice blend, covering, and simmering until firm.
  2. Preheat your oven to 350°F (175°C).
  3. In a non-stick skillet, melt the butter over medium-low heat; sauté chopped celery and onion until soft.
  4. Increase heat; add sliced mushrooms and cook until softened.
  5. Sprinkle flour over vegetables; gradually stir in chicken stock and milk until thickened.
  6. Combine sauce with cooked chicken and cheese; season with salt and pepper.
  7. Mix cooked rice into the chicken mixture; transfer to a greased casserole dish.
  8. Combine panko crumbs with Parmesan and melted butter; sprinkle over casserole.
