  • 45 ripe plums, halved and pitted
  • ½ cup chopped pistachios
  • 23 sprigs fresh thyme (leaves only)
  • 2 tbsp extra virgin olive oil
  • 1 tbsp honey (optional)
  • Sea salt and cracked black pepper to taste
