  • 2 tbsp olive oil
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 3 medium carrots, peeled and sliced
  • 2 medium potatoes, peeled and cubed
  • 4 cups beef broth
  • 1 cup apple vinegar (optional)
  • 1 bay leaf
  • 1 tsp dried thyme
  • 1 tbsp Worcestershire sauce

Instructions

  1. Heat olive oil in a Dutch oven over medium-high heat. Sear the cubed beef until browned on all sides (about 5–7 minutes).
  2. Add diced onion and minced garlic; cook until the onion is translucent (about 3–4 minutes).
  3. Stir in sliced carrots, cubed potatoes, beef broth, apple vinegar (if using), bay leaf, dried thyme, and Worcestershire sauce.
  4. Bring to a boil, then reduce heat to low. Simmer uncovered for about 1.5 to 2 hours until beef is tender.
  5. Prepare crusty bread bowls by cutting off the tops of round loaves and hollowing them out if desired.
  6. Ladle the stew into each bread bowl and serve warm.
